One for me would be beef wellington. It’s one of those iconic, fancy dishes that feels like a culinary rite of passage—layers of tender beef, mushroom duxelles, and flaky pastry all wrapped up perfectly. I’ve watched enough cooking shows to know it’s not exactly beginner-friendly, which is probably why I’ve kept it on the “someday” list. But there’s something so satisfying about the idea of pulling it off just once, even if it takes hours and a few trial runs!
