    How to tell if potatoes are bad:

    Sprouts: Small sprouts are okay—just remove them before cooking. Large sprouts or many sprouts mean it’s time to discard.

    Soft or mushy texture: Fresh potatoes should be firm. If they feel soft, wrinkled, or shriveled, they’re past their prime.

    Green color: A green tint means the potato has been exposed to light and may contain solanine, a toxin. Avoid eating green parts.

    Bad smell: A musty, moldy, or sour odor means the potato is spoiled.

    Mold or dark spots: Visible mold or black spots are signs of decay—discard those potatoes.
